Chia: Rediscovering a Forgotten Crop of the Aztecs
Chia is usually thought of as a novelty plant. A scientist introduces this member of various salvia species as a "forgotten" food valuable for its high omega-3 fatty acid content. The authors (arid land studies, U. of Arizona) discuss chia's importance as an early Mesoamerican crop, its health benefits, and commercial potential in enriching such staples as eggs and poultry. Salvia hispanica L. is not the salvia usually listed in modern herbals.
