Excitotoxins are food additives that can stimulate nerve cells in the brain to death. The most common excitotoxins in the diet are MSG and aspartame. MSG, in particular, is present in almost all processed foods, but is often called by different names. It can even be in foods labelled 'No MSG'.

The author, a neurologist, believes that excitotoxins may cause or contribute to a number of diseases, including Alzheimer's and brain tumors.
