Kamut, the registered trademark for khorasan wheat, is an ancient grain with plenty to offer for modern menus. A distant relative of wheat, Kamut has a slightly sweet taste and boasts higher levels of protein, vitamins, minerals and fats than the durum wheat more commonly eaten today. Although Kamut is typically an ingredient in breads, cereals, snacks and other baked goods, you can sprout it and consume it raw. <Br><Br>

<b><u>Benefits</b></u> <Br><Br>

Although raw Kamut sprouts have potential dangers, they also pack a nutritional punch. Half a cup of uncooked Kamut contains 13.6 g of protein, 8.5 g of fiber, 4 mg of iron, 125 mg of magnesium, 64 mcg of selenium, 415 mg of potassium and 359 mg of phosphorus, according to the USDA Nutrient Database. In addition, the process of sprouting Kamut from its original dry state removes enzyme inhibitors, which may make the sprouts easier to digest than unsprouted forms of this grain.<Br><Br>

<b><u>Prevention</b></u> <Br><Br>

Although there's no way to remove the gluten from Kamut sprouts to make them safe for people with celiac disease, you can destroy potential pathogens by thoroughly cooking Kamut sprouts before you eat them. The Centers for Disease Control and Prevention warns that even vigorous washing isn't enough to kill harmful bacteria, so raw Kamut sprouts will always carry a danger of food-borne illness until you've cooked them.<br><br>

<b><u>Safety Issues & Celiac Disease</b></u> <Br><Br>

Raw sprouts, including Kamut, may pose a greater risk of harboring disease-causing pathogens than other raw plant foods. As the Centers for Disease Control and Prevention explains, the warm, moist conditions used to germinate grains potentially allow bacteria to flourish, breeding pathogens such as Salmonella and E. coli. Eating uncooked Kamut sprouts contaminated with bacteria sometimes results in diarrhea, vomiting, nausea, cramps and possibly more serious symptoms. Avoid any form of raw sprout if you're pregnant or nursing.<Br><Br>
Raw Kamut sprouts may be dangerous to consume if you have celiac disease. Like other relatives of wheat, Kamut contains gluten -- a type of protein that triggers immune responses in sensitive individuals. If you have celiac disease or another form of gluten intolerance, Kamut sprouts and other gluten-containing grains cause bloating, stomach pain, constipation, diarrhea, vomiting, fatigue, joint pain or skin rashes, according to the National Digestive Diseases Information Clearinghouse.<Br><Br>

Diatomaceous Earth comes to us via the one-celled plant-creature called the Diatom. In a few select areas in the world where it has been untouched for thousands of years, <b>huge</b> deposits of Diatomaceous Earth are built up, as seen in this picture to the left.<br><br><br>

Diatomaceous Earth is hence not really "earth"; it's more like fossil shell flour - nothing more than the silica shells of these little one-celled diatoms.  The micronized pieces of the Diatomaceous Earth powder are extremely <b>hard</b> and <b>sharp</b>.  This is what makes it so effective for killing fleas, plus parasites and worms in animals and humans.  This food grade Diatomaceous Earth is ground down into a micronized size and when you rub it inbetween your fingers really hard, you would have <b>no idea</b> that it is actually so hard and sharp at the smallest level.  It just feels like any type of powder.  However, to insects, fleas, tapeworms, mites and other parasites, it is just like shards of <i>glass</i>.<br><br>

The Diatomaceous Earth gets onto the insect, cockroach, flea, or parasite, and as they move, these tiny microscopic sharp pieces scratch off the waxy coating of these bugs and they eventually dehydrate and die within an hour.  You can put a coating of Diatomaceous Earth on your dog, for example, and it has the great potential to kill any fleas and ticks they are carrying more effectively than toxic chemicals, and in a very short time frame.  Diatomaceous Earth (DE) has the potential to work effectively on bed bugs, mites, for flower gardens (just sprinkle it on the flowers and dirt), for organic gardening (effective against all garden "pests"), and for fruit trees (just mix with water and spray it on the fruit trees for pest protection).  It is also great to feed about a tablespoon of DE to pets, because it has the potential to completely de-worm them in literally just a few days.<br><br>

This product is food grade and humans can consume it too, but I recommend only consuming Diatomaceous Earth <i>short term</i> against tapeworms and other macroparasites.  I know of some people who take it every day for managing parasites and cleaning the walls of the intestines, but it's not something I would personally intake on an ongoing basis.  Although it is micronized and you can't really cut your fingers with it, no matter how much you pinch and rub it, still... it <i>is</i> still like glass on some level.  For me, I would be concerned it might create polyps in my intestines or possible other issues if I consumed it long-term.  In the short-term, I consider Diatomaceous Earth an outstanding product for simple, natural parasite/pest control for the whole family!<br><br>

Place 1 1/2 Cups of buckwheat groats into a bowl and cover it with 2- 3 times as much room temperature water. Mix the seeds up so that none are floating on the top. Allow the seeds to soak for about an hour. Drain the water in a colander and let them stand, rinsing 3 times per day with cool water for 2 days. You will notice a gooey substance on the buckwheat, which is starch. Make sure that you wash this off thoroughly. Spouts will form after a day or two.<br><br>

Les was diagnosed with high cholesterol in February of 2009 after trying for a year to lower it with diet and exercise. His doctor prescribed cholesterol-lowering medications that he took for several months but quit because of their side affects.<br><Br>

His brother, Jeff Clark, a naturopathic physician, recommended he try raw oat groats to help lower his cholesterol numbers. “Raw (unkilned) organic oat groats are sometimes called sprouting oats or Scottish oats. Oat groats are the unbroken inner oat seed kernels with the outer husks removed. Oat groats have not been cooked nor heat treated in any way. Les soaked 2/3 cup of raw oat groats in 1 1/2 cups of water overnight. In the morning he used a blender to chop up the groats into smaller pieces, adding a little cinnamon, yogurt or blueberries. He commented that the groats had a nice nutty, almost sweet flavor. (You might want to start with a smaller serving every couple of days until your gut environment acclimates to the raw groats. Using a blender helps break down the mixture into a pleasant and digestible consistency.)<br><Br>

He ate this for breakfast two to three times a week until his next blood test in September of 2009, which revealed the good news. His total cholesterol dropped from 190 to 157, triglycerides went from 198 to 120, LDL from 121 to 98, VLDL from 40 to 24, and his HDL improved from 29 to 35, still low but almost normal range.<br><Br>

Diabetes is a condition in which the body does not make, or properly use, insulin to get sugar into the cells. According to the National Institute of Diabetes and Digestive and Kidney Diseases, neuropathy is a common problem associated with diabetes and can affect any of the body's systems, from eyes and ears to lungs, heart and toes. Neuropathies stem from nerve damage caused from uncontrolled blood sugar. A study in the September 2008 issue of "Evidence-based Complementary and Alternative Medicine" reports that when researchers fed diabetic rats an extract from red cabbage for 60 days, they experienced improvement in all of their negative symptoms associated with diabetes, including neuropathy. Blood sugar levels were decreased and kidney function also improved. <br><br>
<b><u>Caution</u></b> <br><br>
While red cabbage is good for you in many ways, there is one way in which it may be particularly bad. If you are on blood thinners or anticoagulants, you should watch your intake of red cabbage. According to America's Anticoagulation Resource, those on blood thinners should limit their vitamin K intakes to between 60 and 80 micrograms per day. A 1-cup serving of red cabbage contains 42 micrograms. If you consume other foods high in vitamin K, such as leafy greens, you should limit your red cabbage intake, otherwise it may interfere with your blood thinner's ability to work properly. <br><br>

Mustard comes from the cabbage family and can be found in forty different varieties. However, there are three principal types of mustard that are commonly used: white, brown and black mustard seeds. White seeds, that are actually yellow in color, are the most mild. They are the ones used to make the yellow mustard most of us put on our hotdogs. Brown seeds, which are dark yellow in color, are a bit stronger and are used to make Dijon mustard. Black mustard seeds are the most pungent in taste.<br><br>


Mustard seeds are used in their whole seed form, as a ground powder or combined with vinegar, wine or other liquids to create the paste most of us are familiar with. Mustard grows well in temperate climates. While Hungary, Great Britain, India, Canada and the United States currently produce the vast majority of mustard seeds used in the world today, the origin of mustard seeds can be traced to different areas of Europe and Asia.<br><br>


The ancient Grecians used mustard seeds for their culinary properties. And it was in Rome that a paste from the ground seeds was first created, which is probably the ancestor of the mustard condiment we use today. Ancient Sanskrit writings dating back approximately 5,000 years, mention mustard seeds. Mustard seeds are also discussed in the New Testament in which faith and the kingdom of Heaven are compared to a mustard seed.<br><br>


Early physicians, including Hippocrates, used mustard seed in their medicines. And even today, in many parts of the world, mustard seeds are used medicinally.<br><br>


Mustard is an age-old purgative, meaning, it can be used to induce vomiting. This can be necessary in cases of accidental poisoning. My friend’s mother told me that in order to induce vomiting, you need to drink a mustard-flavored water concoction. Simply boil a teaspoon of seeds in a cup of water. Drain and allow the water to cool completely. Drink the mustard-flavored water all at once to cause vomiting.<br><br>


For head or lung congestion, mustard is also a wonderful remedy. I was told that to clear congestion, prepare a warm foot-bath with water and a tablespoon of ground mustard seeds. Soaking your feet in this will draw the blood to the lower part of the body, and thus relieve congestion.<br><br>


Mustard can also be used to help alleviate respiratory issues by making a poultice of ground mustard and applying it directly to the chest and throat.<br><br>


In fact, mustard seeds are like tiny multi-vitamin pills. They contain calcium, iron, manganese, phosphorus, zinc, niacin, and dietary fiber. Mustard seeds also contain omega 3 fatty acids, which can lower cholesterol levels and help prevent heart disease. The seeds also have selenium and magnesium, which both possess anti-inflammatory properties and can help reduce the symptoms of rheumatoid arthritis or asthma. Mustard seeds are also known their anti-cancer effects due to the isothiocyanates in them.<br><br>

Sprout grass seeds in water for about six hours then sow in a seed tray containing fifty percent top soil and fifty percent peat moss. The soil should be two inches in depth. Water the tray lightly. Place the tray in direct sunlight for seven to ten days, watering as needed. Once the wheatgrass reaches seven inches in height, it is ready to harvest. A serving also contains 800 mg of protein and 600 mg of fiber. <br><br>


<b><u>Comparison With Wheat Grass</b></u><br><br>

There are few nutritional differences between barley grass and wheat grass. Both are cereal grasses which, when young, have nutrient profiles more like those of vegetables rather than grains. Like barley grass, wheat grass is also rich in chlorophyll, vitamins A and C, and minerals like iron and calcium. Both barley and wheat grass act as antioxidants which reduce inflammation and may possibly confer other health benefits as well.<br><br>

<b>Note:</b> Adzuki Beans will pale somewhat as they swell with water. Before you end your soak, check them: If you see that on some of your beans, part of the bean (one end usually) is still as dark as it was before soaking, they need a little more time to soak - to make sure they have taken up all the water they need. <br><br>

For that reason we generally soak Adzukis for 12 hours.<br><br>

If we are in a hurry we'll use warmer water - 80° is a good starting point if you want to experiment with shorter soak periods, but be careful not to go too hot - it can cook your seeds in which case they will never sprout.<br><br>


Adzukis also tend to have more hard seed than other seed types. If you buy your seed from us this is not a concern, but if you buy Adzuki or other seeds elsewhere be sure to examine them after soaking to make sure there are no hard seeds (seeds that are as hard after soaking as before) lurking at the bottom. If there are - throw those (the hard ones) out! They are easy to spot as they are smaller than those that are swollen with water.<br><br>

This variety of maca does well at lower elevations, unlike red maca which thrives at very high altitudes. We love it for its strong life-force and all the power it has as a food. With fresh maca we have so many more culinary possibilities compared to just powder! And consider the freshness...the life-force of fresh maca to powdered is vast. It prefers cooler weather and can take allot of sun if its not too hot. Definitely a favorite for superfood lovers!<br><br>

Family:  Mustard (Brassicaceae)<br><br>

Hardy to all temperate zones. Biennial, radish-like, rosette forming plant native to the high Peruvian Puna.  This is a select cultivar that gives high yields of firm, yellow roots and demonstrates a tolerance for low elevation.<br><br>

Sow the seed on the surface of the seed bed, stir it around with your fingers, then tamp in securely. Germination is in 4 days at 65 degrees F soil temperature.  Plant prefers fall, winter and spring conditions for growth.  Full sun and a fast-draining soil is preferred. Maca likes a somewhat alkaline soil, such as decomposed granite or volcanic soils.  Composted manures are a good fertilizer for Maca.  Thin to 6 inch spacing, and harvest after the first year of growth.  Best to direct-seed in September and harvest in May or so, unless winters are very snowy.  With a little snow, the plant grows through the winter, which is preferred, as it encourages bulbing (the hypocotyl).  If left in the field for 2 years, the root will become quite woody and the plant will go to seed.  Probably the best regions for growing maca are high steppes in tropical or subtropical countries.  The plant is very tolerant of high intensity sunlight and withstands drastic temperature fluctuations. The second photo is a germ test.  New seed tests at 86% germination.
