This kale immediately freeze dried after harvest. The freeze dry process

Kale, like other members of the brassica family, contains sulforaphane and
indole-3-carbinol, that protect against various types of cancer. Di-indolyl-
methane (DIM) a metabolite of indole-3-carbinol has been found to be an
effective immune modulator, anti-bacterial and anti-viral agent through its

carotenoids: lutein and zeaxathin. These flavonoids have strong anti-oxidant

for synthesizing Sphingolipid, the fat needed to maintain the myelin sheath
