A thinner and more tender variety of Japanese kombu, light brown to dark green in color, Kelp is the all-purpose sea veggie - used in soup stocks, pan-fried for chips, stir-fried with carrots and other veggies, and marinated for salads. Its natural glutamates enhance flavors and tenderize high protein foods like beans.
