Raw Recipe: Apple Walnut Inspiration Medley
1 large organic fuji or gala apple (granny smith works well too!)
1 Tbsp organic, raw extra virgin coconut oil or almond butter
1/2 tsp organic ground cinnamon powder
1/2 to 2/3 cup Walnut Inspiration (use as much as you like!)
optional: pot of warm water to melt coconut oil
Chop your apple into small cubes - about 1/2inch cube. I often cube mine even smaller to catch more yummy flavors!
Melt your coconut oil (I melt mine in a glass jar in a warm water bath or in the dehydrator).
Drizzle melted coconut oil over your apples, sprinkle with cinnamon, and stir well to coat apples.
Mix in Walnut Inspiration - stir well and enjoy your super-simple, super-yummy Superfood Apple Medley!
Add 1 heaping tsp. Healthforce MacaForce Vanilla Spice for boosting your energy, endurance, and adrenal health while adding a yummy vanilla flavor!!!
Add 2-3 drops Essential Oil of Orange to boost antioxidant levels and add a sweet clean orange essence to your Medley!!!
Cultured Coconut Yogurt
4 - 6 Young Thai Coconuts (you will use the water from 1 for your culture starter, and water from a 2nd coconut to make your yogurt. Use the remaining coconut water to make coconut water kefir)
1 Kefir Starter Packet (my favorite is the Body Ecology Kefir Starter. You can subsititute 3 or 4 probiotic capsules if you prefer.)
1 Tablespoon Yacon Syrup (optional)
1 dropper Superionic Minerals (optional)
1 Teaspoon Vanilla powder (optional)
Step 1 - Start your Culture:
Pour water from 1 coconut in to a ceramic or glass pot and heat to 92 degrees (just below skin temperature)
Add 1 Tablespoon yacon syrup (optional - yacon syrup is high in FOS, which feeds your probiotics and makes them strong and happy) and 1 dropper or about 20 drops of Superionic Minerals (also optional - I believe my yogurt is more lively and energized with minerals added).
Add the contents from 1 Kefir Starter Packet and stir well.
Remove from heat and keep at room temperature while your probiotic cultures activate
Step 2 - Make your Coconut Yogurt
Scoop the meat from 4 - 6 Young Thai Coconuts and add to your high-speed blender. You will have somewhere around 4 cups of coconut meat.
Add coconut water or filtered water to about 2 inches below your coconut meat level in your blender.
Blend, starting slow and easing up to high speed, until your coconut meat is the texture and consistency of thick pudding.
Add 1 tsp vanilla powder (optional) and blend just until well-incorporated.
Pour your coconut pudding into a large glass container and add about 1/4 cup of your probiotic liquid. Stir well.
Pour the rest of your probiotic liquid into a glass jar and mix it with any extra coconut water you have left. Let this sit at room temp for 12 - 24 hours and you have coconut kefir - delicious! (Refrigerate your kefir after it finishes culturing).
Cover your glass container with your yogurt and let it sit at room temperature (72 - 78 degrees) for at least 12 hours, up to 24. If you have a strong culture, you will see air pockets in your yogurt and it will expand in size to fill more of its container.
When it is finished culturing stir well to harmonize its texture and store in your refrigerator.
This makes the most delicious yogurt! Now that you made kefir, yogurt-making gets even easier. Next time you make yogurt, skip step 1 and add kefir to your blended coconut pudding. Easy!
