When Rhonda was young she loved sweets with the peanut butter/chocolate combo but let go of those types of foods many years ago. She wanted to create a healthier version and started with almond butter because she doesn't digest peanuts well and knew that many other people have the same issue. Rhonda decided to use carob instead of chocolate because she didn't want to put any stimulants into her body. Chocolate contains caffeine and cacao contains the theobromine, both stimulants. She prefers carob because it's rich in insoluble dietary fiber, vitamins, minerals and the tannins in carob contain antioxidants. Setting aside all the health reasons, the combo of carob and almond butter creates a fudgey taste and texture and when it's rolled in hemp seeds, it's divine!
